Ingredients

  • 2 medium sweet potatoes, peeled and diced

  • 8 ounces of beef

  • 1 tbsp fresh thyme

  • 2 cups of beef broth, no sodium

Directions

  • Place the sweet potato, beef and thyme in a saucepan and cover with the broth. Bring to a boil and simmer until tender, about 15-20 minutes.
  • Transfer the cooked ingredients in a blender or food processor. Add broth as needed and blend until smooth.
