Pancakes & Waffles – Not Just for Breakfast!

Do you love pancakes or waffles? Most of us do and when we think of either of them we think of breakfast. But pancakes and waffles can be good anytime. They are delicious for lunch, dinner or even snacking. You can also make a large bunch up ahead of time and then freeze them in smaller portions. Just reheat in the microwave and you have a hot treat in seconds.

Chocolate Brownie Waffle Sticks

This recipe is from the makers of the Cuisinart Waffle Dipper maker. A fun new product perfect for kids!

  • 1 cup all purpose flour
  • 3 tablespoons sugar
  • 3 tablespoons packed brown sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 large egg
  • 1 large egg white
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted, cooled slightly

Place the flour, both sugars, cocoa powder, baking powder, baking soda, salt, and cinnamon in a medium bowl; stir with a whisk to blend. Place egg and white in a medium bowl; whisk until to smooth. Add the milk and vanilla extract; stir with whisk well blended and smooth. Add liquid mixture to dry mixture, whisk until smooth. Stir in melted butter. Let the batter stand for 5 minutes. If using the Cuisinart Waffle Dippers preheat on setting #3.

When preheated, pour about 1 cup batter onto enter of lower waffle grid. Spread batter evenly. Close lid. Green light will go off, when waffle sticks are done; green light will come back on. Remove sticks from waffle iron. Repeat with remaining batter. Serve immediately.

NOTE: You can also make this in your waffle maker.

Double Chocolate Brownie Pancakes

  Prepare this delectable recipe for someone you love this weekend! 

Ingredients:

  • 2 Cups Aunt JemimaÒ Complete or Buttermilk Complete Pancake & Waffle Mix
  • 3 Tablespoons Unsweetened Cocoa
  • 2 Tablespoons Granulated Sugar
  • 1 ½ Cups Water
  • 1/3 Cup Walnuts, chopped
  • ¼ Cup Semisweet Chocolate Chips

Directions:

 

Combine pancake mix, cocoa and sugar in large bowl. Stir in water with wire whisk until large lumps disappear. Add walnuts and chocolate chips, stir until evenly mixed. Let batter rest for five minutes. Cook according to package directions. Serve warm with Aunt JemimaÒ Syrup 

Yield:  14 Pancakes

  Gingerbread Friends Pancakes

 A perfect project for parents and kids to cook-up together, this delicious Gingerbread Friends pancake recipe from Aunt Jemima brand pancakes and syrups is as much fun to create as it is to eat.

Ingredients:

3 ½ Cups Aunt JemimaÒ brand Complete or Buttermilk Complete Pancake & Waffle Mix:

2 Teaspoons Ground Cinnamon                                               

1 Teaspoon Ground Ginger

2 ¼ Cups Milk                                                                        

¼ Cup Molasses

 Directions:

Combine mix, cinnamon and ginger in large bowl, set aside in medium-sized bowl, combine milk and molasses with wire whisk until well blended. Add contents of medium-sized bowl to dry ingredients in large bowl. Blend until large lumps disappear. Cook according to package directions. Use two-inch gingerbread man cookie cutter to create your plate of friends. Have kids decorate the pancakes. Serve warm with Aunt JemimaÒ brand Syrup. 

More decorating ideas:

  • Use blueberries to make buttons.
  • Decorate with whipped cream.
  • Slice strawberries to create a smile.
  • Use chocolate chips to make a nose.
  • Use your imagination!

Applesauce Pancakes

Applesauce adds natural sweetness and moist texture. These are yummy with just a little butter. 

Serves: 4 with leftovers

·        2 1/2 cups whole-wheat flour

·        1/2 teaspoon salt

·        1 1/2 teaspoon baking soda

·        2 large eggs

·        1 cup milk (whole or skim)

·        1 cup applesauce (unsweetened)

·        1/2 cup nonfat cottage cheese (optional)

·        2 tablespoons canola oil

Mix flour, salt, and baking soda in a large bowl. In a separate bowl, whisk eggs, milk, and applesauce. Stir egg mixture into flour until batter is mixed but still a little lumpy.  Stir in the cottage cheese, if using. Batter should be loose enough to pour onto the skillet with a quarter-cup measure.  If necessary, add a little more milk.

Heat oil in a large skillet over medium heat. Spoon batter into the skillet to make 3 or 4 pancakes, taking care to be sure pancakes stay separate. Cook until bubbles burst and stay open, then flip, cook for an additional minute, and serve or put in the oven on warm.

Serve with butter and syrup.

Variation:  To go the whole nine yards on the apple theme, use apple juice or cider in place of the milk.
